When an order is received, potatoes are scooped up from the storage bin using a forklift fitted with a potato bucket. The potatoes are metered out at the desired speed onto the grading and sorting line. The potatoes are sorted according to size, washed (if desired), and hand graded. The graders watch for cuts and bruises, green spots, and the occasional rock. The undesired potatoes are picked out and most often get trucked down the road where a local farmer feeds them to his cattle. The smaller potatoes called “B size” can be used to plant in the coming spring, provided they have met seed specifications.
